WIAW, A Lime, Mango and Cashew Smoothie Recipe & BlendCo SKIN blend

Hi there gorgeous! :) So after endless problems the blog should finally be back and running the way it should….wuhuuuu!

So today I’m so excited to share my first ever WIAW post with you all. I’ve gotten a lot of requests to share what I eat in a full day lately so decided to hop onto the What I Ate Wednesday bandwagon-especially because it’s so fun to link up with other health food bloggers out there!

Breakast:

Not the best picture, sorry! It was 5:15 am and as I’m sure all the other food bloggers out there will agree with me on lightning is super important and 5:15am lighting is definitely not the best ;). But basically just a  HUGE green juice consisting of celery, cucumber, pineapple, lemon, and parsley and dandelion (both great for the liver and detoxifying).

Lunch:

Ahh okay, lunch was definitely my favourite meal of the day! A mango, lime and cashew smoothie….yes: it does sound as good as it tastes! (Recipe at the end of the post). I topped that with some BlendCo SKIN Superfood Blend and some additional Goji Berries. I was sent this product a week ago  and have been absolutely loving it and literally just find myself eating it by the spoonful! It’s filled with 7 skin loving superfoods. I really like the approach they take to healthy skin because I myself suffered from sever (and when I say severe, trust me: I mean sever!) cystic acne. I was put on one prescription medication after the other and nothing really seemed to fix the problem. Until I started eating healthier and suddenly I started waking up to clearer and healthier skin each day! Back then it blew my mind because I never considered the fact that what I might be putting in my body would affect it on the outside.I still have all the acne scars to remind me of how bad my skin used to be, but the actual acne is a lot lot better and I’ve now switched over to a completely natural skin care routine woop woop!

I wasn’t even asked to talk about this, but wanted to share this with you because I find it a really great product. I would never ever talk about something I don’t believe in and have also refused offers from company’s because I don’t believe in recommending anything I don’t believe in or haven’t tried myself. Dinner:

Leftovers from dinner last night! Zucchini pasta with a creamy basil sauce, chickpeas and cherry tomatoes! So delicious and super easy! The recipe will be in my upcoming ebook that is finally coming together! I can literally not even express to you how excited I am to share the ebook with you all!!!

This Wednesday was also the day I received my the TBV apparel shirts created by my lovely friend Jordan from the blond vegan! I am so excited and happy for Jordan and all the amazing things she’s achieving and that I know are coming her way! The shirts are gorgeous and I love all the fun messages! Here’s me rocking a few:

 

Okay so now onto the smoothie recipe:


Mango, Lime and Cashew Smoothie

  • 1 Mango
  • 1 date
  • 1/2 a banana
  • 1 cup of spinach
  • 1 cup of coconut water
  • Juice of 1 lime

Ideally soak the cashews in a glass of water overnight, drain them in the morning. If you don’t have time, don’t worry about it thought. As long as you have a strong blender it should still be able blend the cashews. Then add all the other ingredients and blend! Feel free to add more coconut water if you’d prefer a more watery smoothie.
